Mango Glazed Salmon

Ingredients:

  • 2 tbsp soy sauce
  • 1 tbsp minced fresh ginger (i use the ginger in the small jar found in the produce section of most grocery stores)
  • 1 (3 inch) cinnamon sticks
  • 6 oz mango nectar (1/2 a 12 oz. c a n)

Directions:

  1. Stir together first 6 ingredients in a small saucepan.
  2. Bring to a boil; reduce heat, and simmer, uncovered, 25 minutes or until reduced to 3/4 cup.
  3. Pour mango mixture though a wire-mesh strainer; discard solids.
  4. Return mango mixture to saucepan; keep warm.
  5. Place salmon on a rack in a broiler pan coated with cooking spray.
  6. Broil 5 1/2 inches from heat 5 minutes.
  7. Brush fish with 1/3 cup mango mixture.
  8. Boil 3 more minutes or until fish flakes with a fork.
  9. Spoon remaining mango mixture evenly over fish.
