Low Fat Baking Mix Oatmeal Cookies

Ingredients:

  • 1 cup packed brown sugar
  • 2/3 cup softened margarine or 2/3 cup softened butter or 2/3 cup unsweetened applesauce
  • 1/2 tsp vanilla
  • 2 eggs or 1/2 cup egg
  • 2 cups baking mix
  • 1 1/4 cups raisins (optional)

Directions:

  1. Heat oven to 350*.
  2. Mix brown sugar, margarine or butter, vanilla, and eggs. Stir in remaining ingredients.
  3. Drop dough by rounded teaspoonfuls about 2 apart onto ungreased cookie sheet.
  4. Bake until light brown, about 10 minutes.
