This recipe is adapted from . I suggest using WaterMelon's low fat baking mix (Low Fat Bisquick Substitute) to make these these cookies healthier. (Thanks, WaterMelon!) I also usually substitute unsweetened applesauce for all or part of the butter or margarine.
Ingredients:
1 cup packed brown sugar
2/3 cup softened margarine or 2/3 cup softened butter or 2/3 cup unsweetened applesauce
1/2 teaspoon vanilla
2 eggs or 1/2 cup egg substitute
2 cups baking mix
1/2 cup quick-cooking oats
1 1/4 cups raisins (optional)
Directions:
1. Heat oven to 350*.
2. Mix brown sugar, margarine or butter, vanilla, and eggs. Stir in remaining ingredients.
3. Drop dough by rounded teaspoonfuls about 2 apart onto ungreased cookie sheet.
4. Bake until light brown, about 10 minutes.
