Low Carb Mexican Cauliflower Casserole

Ingredients:

Directions:

  1. Steam fresh or frozen cauliflower in water. Drain and set aside.
  2. Mix tomatoe, green pepper, onion and other seasonings.
  3. Can also substitute 1 -2 cups of traditional salsa.
  4. Brown ground turkey and add vegetable mixture.
  5. If desired add taco seasoning to taste. Can also add jalepeno peppers,chili, cumin, salt and pepper to taste.
  6. Heat milk. Add 1/2 cup cheddar cheese and 1/3 cup cream cheese. Mix with califlower.
  7. Put cauliflower, cheese mixture on bottom of casserole pan.
  8. Put ground turkey and tomatoe mixture on top of cauliflower.
  9. Add a bit of additional salsa if desired.Sprinkle top with remaining grated chedder cheese.
  10. Bake in a preheated oven at 400 F. for 15-25 minutes until hot and bubbly and cheese is melted.
  11. Enjoy!
