Ingredients:

  • 1 (2 lb.) lobster
  • 6 1/2 tbsp butter divided
  • 1/2 tsp. minced garlic
  • 1/2 cup. chopped celery
  • 1/2 cup. chopped carrots
  • 1/2 cup. chopped onion
  • 1/2 cup. tomato paste
  • 6 cup. fish stock
  • 1 tbsp. brandy
  • 1 1/2 tbsp. flour
  • 1/4 cup. sherry

Directions:

  1. Remove lobster meat from shell, chop meat
  2. Refrigerate til needed
  3. Coarsly chop shell
  4. Heat 3 tbl. butter in med. stock pot
  5. Add shell and garlic
  6. Cook til browned
  7. Add celery, carrots and onion
  8. Cook til softened
  9. Add tomato paste, cook 5 munutes
  10. Stir constantly
  11. Add fish stock and brandy, bring to a boil
  12. Reduce heat to low
  13. Simmer 1 hour, stir occasionally
  14. Meanwhile heat 1 1/2 tbl. butter in small saucepan
  15. Use low heat
  16. Add flour
  17. Cook 20 munutes,stir constantly til deep golden brown
  18. Stir into soup,
  19. Continue simmering 45 minutes longer,stirring often
  20. Strain, and return to stock pot
  21. Stir in cream and sherry
  22. Heat remaining butter in a small skillet, add lobster
  23. Cook til opaque
  24. Add to soup.
