Linguine With Sweet Pepper Sauce

Ingredients:

Directions:

  1. Bring a large pot of salted water to a boil.
  2. Add pasta and cook until al dente.
  3. Drain noodles, dress with a little olive oil, and reserve in a warmed serving bowl.
  4. Heat oil, and onion.
  5. Sauté until translucent.
  6. Add garlic and continue sautéing until fragrant.
  7. Add the peppers, 1/2 cup of water, and salt and pepper to taste.
  8. Cook over very low heat until peppers begin to fall apart.
  9. Pass the mixture through a sieve, reserving the vegetables only.
  10. Add the warmed cream and stir.
  11. Keep the sauce warm.
  12. Toss hot sauce with pasta.
  13. I usually toss it in a sauté pan to warm it through.
  14. Serve immediately.
