Lentils with Pomegranate Molasses and Swiss Chard

Ingredients:

  • 1 1/2 cup dried lentils
  • 1 2/3 tbsp olive oil
  • 3/4 cup cilantro
  • 8 cloves garlic
  • 1 tbsp lemon juice

Directions:

  1. Cover lentils with water, bring to a boil, then simmer until tender
  2. Remove lentils, reserve any leftover liquid up to a cup
  3. Wilt swiss chard in part of olive oil in pot; remove
  4. Saute smashed garlic cloves and finely chopped cilantro in remaining olive oil
  5. Stir in lentils with liquid and chard; salt to taste and cook for another ten minutes or so on low
  6. Stir in lemon juice and pomegranate molasses (NOT RASPBERRY JELLY it just wasn't in the database)
