Lentil, Meat, and Veggie Casserole

Ingredients:

Directions:

  1. Cook lentils in chicken broth according to package directions.
  2. Meanwhile, brown the meat, drain, set aside.
  3. Stir fry the veggies in PAM or olive oil until just cooked, add beef and cooked lentils and stil gently. Be sure not to stir too hard and mash the lentils.
  4. Pour the mixture in a 13x9 casserole dish and cook for 20 minutes on 400 degrees.
  5. You can add bisquick biscuits to the top if you like, and then just cook the whole casserole with dough on top according to bisquick directions.
