Directions:

  1. Wash and strip peel the cucumber, remove the seeds to remove the burps and thinly slice. Peel the jicama and match stick cut slices. Chop the green onion and a good amount of the green stalk. Chop the red pepper.
  2. Squeeze the juice of one lime and zest over the vegetables, sprinkle with salt, toss, minced lemon basil and chill.
