Leek And Gruyere Cream Soup

Ingredients:

Directions:

  1. In saucepan, add 4 cups chicken broth, leeks, mushrooms, fines herbes and pepper
  2. Bring to boil
  3. Reduce heat and simmer, covered until leeks are tender, about 10 minutes
  4. Cool
  5. In batches, put into blender and blend until smooth
  6. Return to saucepan and stir in 1 cup chicken broth
  7. IN mixing bowl, add 1 cup chicken broth and flour and mix until smooth
  8. Stir into leek mixture
  9. Add cheese and parsley, stirring to combine
  10. Return to low heat, stirring constantly until bubbly and cheese is melted
  11. Stir in whipping cream and heat through
