Leek And Gruyere Cream Soup |

Never heard of Fines Herbes until I had to get it for this recipe....From Better Homes and Gardens Ingredients:
6 cups chicken broth |
4 cups leeks, sliced |
1 cup mushrooms |
1 tsp. fines herbes |
1 tsp. white pepper |
1/3 cup flour |
1 1/2 cups gruyere cheese, grated |
2 tbls. parsley, chopped |
1 cup whipping cream |
Directions:
1. In saucepan, add 4 cups chicken broth, leeks, mushrooms, fines herbes and pepper 2. Bring to boil 3. Reduce heat and simmer, covered until leeks are tender, about 10 minutes 4. Cool 5. In batches, put into blender and blend until smooth 6. Return to saucepan and stir in 1 cup chicken broth 7. IN mixing bowl, add 1 cup chicken broth and flour and mix until smooth 8. Stir into leek mixture 9. Add cheese and parsley, stirring to combine 10. Return to low heat, stirring constantly until bubbly and cheese is melted 11. Stir in whipping cream and heat through |
