Ingredients:

Directions:

  1. Layer in the bottom of 13x9 in. pan, or divide between 2 pie plates, the can of refried beans.
  2. Make guacamole by mashing with a fork the 2 avacados with the salsa, onion, lemon juice, and 1/4 c. sour cream.
  3. Spread guacamole over the bean layer.
  4. Spread remainder of sour cream over guacamole layer.
  5. Sprinkle cheese layer over sour cream layer.
  6. Sprinkle tomatoes and then scallions over cheese. Olives too, if using.
  7. Cover and chill before serving.
  8. Serve with tortilla chips or veggies.
