Kentucky Blueberry Coffee Cake

Ingredients:

  • 3/4 cup sugar
  • 1/4 cup butter
  • 1 large egg
  • 1/2-1 cup milk
  • 1/2 tsp salt
  • 2 cups blueberries
  • 1 cup packed brown sugar
  • 1/3 cup flour

Directions:

  1. Cream together sugar, butter and egg; stir in milk.
  2. In a seperate bowl, sift together flour, baking powder and salt.
  3. Stir dry mixture into creamed mixture.
  4. Gently fold in blueberries.
  5. Pour mixture into a greased and floured 9- inch square pan.
  6. Mix brown sugar, flour and butter with a fork (mixture will be crumbly).
  7. Put topping over batter.
  8. Bake at 375° for 25-35 minutes.
  9. A glaze of 1 cup powdered sugar, 1 tsp almond extract and 2 tsp of milk may be poured over warm cake.
