Jen's Cinnamon Raisin Bran Muffins

Ingredients:

  • 1 cup buttermilk
  • 2 tbsp molasses
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup raisins

Directions:

  1. -Combine cereal with the buttermilk, molasses and rasins and let stand for 10 minutes.
  2. -Sift or mix together well with a fork the flour, sugar, salt, baking soda and cinnamon.
  3. -Make a well in the center of the dry ingredients and the the bran-milk-raisin mixture.
  4. -Stir ingredients only enough to moisten them.
  5. -Spoon into muffins tins lined with paper liners.
  6. -Bake in preheated 375 degree oven for 20-22 minutes. Muffins should spring back when touched lightly in the center.
  7. -Muffins may be frozen and eaten later.
