Ingredients:

Directions:

  1. In a large pot over medium heat, saute the onion and carrots for about 5-10 minutes or til onions are softened, add garlic, thyme, cracked black pepper, and parsley (use more if it is fresh) and stir for another few minutes.
  2. Add potatoes, stock, tomatoes (I used Mur Glen's Fire Roasted and Diced Tomatoes) and turkey breast (you can add more but count the calories, I just used what was left over and Randall's does a nice roasted turkey breast).
  3. Bring to a boil, reduce heat and cover. Simmer about an hour or so, soup is flexible.
  4. About five minutes before serving add the spinach and simmer til it is wilted.
  5. Feel better? I did.
  6. Serving size is either two small bowls or one huge bowl.
