Indiana Blackberry Cobbler

Ingredients:

  • 4 cups blackberries
  • 2 tbsp cornstarch
  • 1 cup sugar
  • 2 tbsp butter
  • 1 cup flour
  • 3 tbsp sugar
  • 1/2 stick butter melted
  • 1 egg
  • 1/4 cup milk

Directions:

  1. Toss blackberries in a plastic bag with cornstarch and 1 cup sugar
  2. Place berries in a greased baking pan or casserole dish and dot with 2 Tbs butter
  3. Bake in a 400 F oven for 15 minutes
  4. In bowl whisk flour, 2 Tbs sugar, baking powder , the milk, 1/2 stick of melted butter and the egg
  5. Drizzle over the hot berries and bake another 15 minutes or bubbly and golden
  6. Serve warm, cool or room temp with a vanilla sauce, whipped topping ot whipped cream
