Indiana Blackberry Cobbler |

Magazine recipe on Indiana food using local blacberries: use fresh or frozen. Serve warm, cool or room temp with whipped topping, a vanilla sauce or plain whipped cream Ingredients:
4 cups blackberries |
2 tbs cornstarch |
1 cup sugar |
2 tbs butter |
1 cup flour |
3 tbs sugar |
2 tsp baking powder |
1/2 stick butter melted |
1 egg |
1/4 cup milk |
Directions:
1. Toss blackberries in a plastic bag with cornstarch and 1 cup sugar 2. Place berries in a greased baking pan or casserole dish and dot with 2 Tbs butter 3. Bake in a 400 F oven for 15 minutes 4. In bowl whisk flour, 2 Tbs sugar, baking powder , the milk, 1/2 stick of melted butter and the egg 5. Drizzle over the hot berries and bake another 15 minutes or bubbly and golden 6. Serve warm, cool or room temp with a vanilla sauce, whipped topping ot whipped cream |
