Hominy, Bacon and Eggs Scramble

Ingredients:

  • 1 (14 oz) can yellow hominy
  • 6 large eggs
  • 6 slices bacon

Directions:

  1. Fry bacon in skillet.
  2. Set bacon aside. Reserve two TBS bacon drippings, turn heat down,.
  3. Drain hominy, add to skillet along with the green pepper. Allow to cook until pepper is tender, about 5 minutes on med heat.
  4. Beat eggs and pour over hominy mixture in skillet. Stir until eggs are just set. Crumble bacon and add to mixture. Sprinkle cheese on top.
