Hidden Chocolate Mint Cookies

Ingredients:

  • 1/4 cup shortening
  • 1/4 cup butter or 1/4 cup margarine
  • 1/4 cup brown sugar (packed)
  • 1 egg
  • 1 tbsp water
  • 1/2 tsp vanilla
  • 1 1/2 cups flour
  • 2 tbsp flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 dozen chocolate-covered mint candies (i use andes creme de menthe thins)

Directions:

  1. Mix the shortening, sugars and egg.
  2. Stir in water and vanilla.
  3. Stir together the dry ingredients then mix into the batter.
  4. Chill the dough.
  5. Enclose each wafer into about 1 tablespoon of dough.
  6. Place each on a greased baking sheet and bake in a 400 degree oven for 8-10 minutes, or until no imprint remains when touched lightly.
