Ingredients:

  • 4 eggs
  • 1/3 cup orange juice
  • 1 tsp vanilla
  • 1 1/4 cups milk
  • 1 1/2 cups flour
  • 1/4 tsp salt

Directions:

  1. Separate eggs.
  2. Beat the whites until stiff.
  3. Mix egg yolks, orange juice and vanilla until frothy.
  4. Add milk and stir a couple of times.
  5. Mix dry ingredients together and add slowly to liquids mixing until there are no lumps.
  6. Fold the egg whites.
  7. Server with fresh fruit (raspberries, blueberries, bananas, strawberries, applesauce) and vanilla yogurt.
  8. If you must use syrup remember that the orange juice provides sweetener.
  9. Can be used to make pancakes too.
