Half-Fat Spiced Oatmeal-Nut Cookies

Ingredients:

  • 1/2 cup brown sugar
  • 3/4 cup egg white
  • 1 tsp vanilla
  • 1 1/2 cups wheat flour
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 3 cups oats

Directions:

  1. Heat oven to 350 degrees F.
  2. Beat butter and sugar.
  3. Add egg whites and vanilla and mix well.
  4. Add flour, baking soda, and spices, and beat well.
  5. Stir in oats and pecans.
  6. Drop by rounded tablespoonful onto ungreased cookie sheet.
  7. Bake 10-12 minutes, up to 15 or 17 and they'll still be okay.
  8. Cool on wire rack.
