I needed a tasty, semi-healthy cookie recipe to indulge in while pregnant (so no artificial sugar or chocolate), and after a little tinkering: voila! They are more like biscotti than cookies, meaning it is probably best to cook them a minute or two longer so they'll be crisper and better for dunking in milk! Also, if preferred, you can 1) increase the quantity of nuts to 1 cup, 2) add 1 cup of chocolate chips, or 3) add one cup of raisins Ingredients:
1/4 lb softened butter |
1/2 cup brown sugar |
1/4 cup granulated sugar |
3/4 cup egg white |
1 teaspoon vanilla |
1 1/2 cups wheat flour |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1/2 teaspoon ginger |
1/2 teaspoon nutmeg |
3 cups oats |
1/4 cup chopped pecans |
Directions:
1. Heat oven to 350 degrees F. 2. Beat butter and sugar. 3. Add egg whites and vanilla and mix well. 4. Add flour, baking soda, and spices, and beat well. 5. Stir in oats and pecans. 6. Drop by rounded tablespoonful onto ungreased cookie sheet. 7. Bake 10-12 minutes, up to 15 or 17 and they'll still be okay. 8. Cool on wire rack. |
