Great-Great Grandma Neff's Soft Molasses Cake

Ingredients:

  • 1/2 cup white sugar
  • 1 1/2 cups molasses
  • 1/2 cup melted butter
  • 2 tsp baking soda , dissolved in
  • 2 1/2 cups flour
  • 1 tsp cinnamon
  • 1 tsp ground cloves
  • 1/2 tsp nutmeg
  • 1 pinch salt

Directions:

  1. Mix all dry ingredients except the baking soda.
  2. Dissolve the baking soda in the boiling water.
  3. Add the baking soda mixture, beaten eggs, melted butter and the molasses to the dry mixture.
  4. Mix well.
  5. Batter will be thin.
  6. Bake at 350 degrees for about 45 minutes, checking the cake at 40 minutes with a toothpick (center comes out clean).
  7. Serve warm.
  8. May dust with some powdered sugar.
