Glazed Stuffing Meatloaf

Ingredients:

  • 2 lbs 90% lean ground beef
  • 2 cups leftover prepared stuffing
  • 2 eggs
  • 3/4 cup ketchup
  • 2 tsp mccormick's montreal brand steak seasoning
  • mashed potatoes (optional)
  • fresh herb (optional)

Directions:

  1. Preheat oven to 350. Line roasting pan with foil. In bowl, combine ground beef, stuffing, eggs, 1/2 cup ketchup, chopped parsley and steak seasoning. In roasting pan, shape mixture into a 10 x4 loaf.
  2. Bake until meat thermometer inserted into center of loaf registers 165 F, about 1 hour, 10 minutes, brushing with remaining 1/4 cup ketchup during last 5 minutes of cooking time. Let stand 10 minutes before slicing. If desired, serve meatloaf with mashed potatoes and garnished with herbs.
