Leftover stuffing stirred into ground beef flavored with ketchup-that's a easy recipe for a truly yummy meatloaf! I found this recipe in Woman's World magazine. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
2 lbs 90% lean ground beef |
2 cups leftover prepared stuffing |
2 eggs |
3/4 cup ketchup |
1/4 cup chopped fresh parsley |
2 teaspoons mccormick's montreal brand steak seasoning |
mashed potatoes (optional) |
fresh herb (optional) |
Directions:
1. Preheat oven to 350. Line roasting pan with foil. In bowl, combine ground beef, stuffing, eggs, 1/2 cup ketchup, chopped parsley and steak seasoning. In roasting pan, shape mixture into a 10 x4 loaf. 2. Bake until meat thermometer inserted into center of loaf registers 165 F, about 1 hour, 10 minutes, brushing with remaining 1/4 cup ketchup during last 5 minutes of cooking time. Let stand 10 minutes before slicing. If desired, serve meatloaf with mashed potatoes and garnished with herbs. |
