Ingredients:

  • for the meat filling
  • 1/2 lb groun turkey
  • 1/2 lb ground pork
  • 1/2 tbsp paprika
  • 1 tsp salt
  • 1/2 tsp ground cumin
  • for the flautas
  • 2 tbsp plus 2 tsp chopped cilantro
  • 1 fairly full can of canola cooking spray (or 5-6 tbsp of canola oil, in a small bowl)
  • equipment
  • 1 silicone barbeque brush (if using liquid oil)
  • 3 heavy-gauge nonstick baking sheets
  • paper towels

Directions:

  1. For the Meat Filling: Combine all ingredients in a large bowl and mix well.
  2. Preheat a medium nonstick skillet over medium-high heat. Add the turkey mixture and cook, stirring with a fork to distribute the meat evenly over the bottom of the pan. Stirring constantly, cook until the meat is lightly browned and crumbly, about 5 mins.
  3. For the Flautas: Preheat the oven to 450 degrees.
  4. Spray a couple of heavy-gauge nonstick baking sheets with cooking spray.
  5. Spray both sides of each tortilla with cooking spray. Lay out in a single layer on the baking sheets (usually, I can only do 5 tortillas to a baking sheet).
  6. Put the sprayed tortillas in the hot oven on the baking sheets for about 2-3 mins, until the tortillas are floppy and hot.
  7. When the tortillas come out of the oven (and before spraying and heating the remaining tortillas), cool just until you can pick up one hot tortilla. Working quickly, mound 2 tbsp of the meat filling, 1 tsp of the grated cheese, and 1/2 tsp of the cilantro on one side of the tortilla. Pinch the side of the hot tortilla down over the filling, and roll up the entire tortilla as tightly as possible. Place seam-side down on the third baking sheet. Repeat with the remaining tortillas.
  8. Place the sheet with the rolled tortillas into the 450 degree oven and bake for 7-9 mins, turning at about 5 mins. They should be crisp and golden browned.
  9. While the 8-10 rolled flautas are baking in the oven, repeat the whole process with the remaining unsprayed tortillas.
  10. Place in a cloth or paper towel-lined warming basket and serve immediately.
