Egg Nog Cheese Cake

Ingredients:

  • for the crust
  • 1 egg
  • 100 g sugar
  • 1 pkt vanilla sugar
  • 350 g flour
  • 1/2 packet baking powder
  • filling
  • 7 eggs
  • 1 pinch salt
  • 350 ml eggnog
  • 250 g sugar
  • 1 packet vanilla sugar
  • 100 g raisins

Directions:

  1. For the dough:
  2. Blend oil ,quark , egg, sugar and vanilla sugar.
  3. Mix Flour with baking powder and add to cheese mixture to make a dough .
  4. Roll out dough and place dough in the greased springform pan to cover bottom and part way up sides.
  5. Preheat oven to 175C ( approx 350F )
  6. Mix Yolks, quark, eggnog, custard powder, sugar and vanilla sugar. .
  7. Beat whites with the salt to stiff peaks and blend into cheese mixture.
  8. Add the almonds and raisins
  9. Spread cheese mixture over the dough and bake 60 minutes or cake is done and set
  10. Remove from the oven and let cool completely before cutting.
  11. Serve pieces with heavy cream beaten with some egg nog and dust with cocoa if desired
  12. Note: quark is a European cheese, soft white curd cheese very similar to Ricotta cheese.
