Ingredients:

Directions:

  1. Clean asparagus, eliminate external fibres and cut the hard stems.
  2. Cook for 20 minutes in boiling water in a vertical pot with tip up.
  3. Flavor asparagus and put them for few seconds in a pot with hot extra virgin olive oil, since they are crunchy.
  4. Dry and put on an absorbent shit.
  5. Couple asparagus with rectangular puff pastry stuffed with Parmisan cheese and closed as little balls (see photo) and with salt “zabaione” sauce.
  6. Preparation of salt “zabaione” sauce:
  7. Beat yolks with flour and vegetable stock, adding liquid butter and wine.
  8. Cook the sauce to low fire, adding minced tarragon, salt and pepper.
  9. Serve hot, simulating a dinosaur :)
