Ingredients:

  • 4 eggs
  • 1/2 cup flour
  • 1 pinch salt
  • 1/2 cup whole milk
  • 3 tbsp lemon juice
  • 1/4 cup confectioners' sugar

Directions:

  1. Heat oven to 425 degrees. Place a 12 inch overproof skillet with butter in oven.
  2. In a blender, combine eggs, flour, salt and milk until a batter forms, 30 seconds.
  3. Remove pan from oven and pour in batter. Return to oven and bake until pancake is puffy, golden and set, 18-20 minutes (if you have a 10 in pan it will take 20-22 minutes).
  4. Serve from skillet or transfer to a plate, drizzle with melted butter, lemon juice, sugar or fruit.
