Crispy Carrot Casserole

Ingredients:

  • 1 bunch of carrots
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/3 to 1/2 cup grated cheese
  • 1 1/2 cups milk
  • 1 tbsp sugar

Directions:

  1. Cook and crush carrots.
  2. Add egg and grated cheese.
  3. Beat thoroughly.
  4. Add milk, sugar, salt, pepper, cracker crumbs and butter.
  5. Place in lightly greased casserole dish.
  6. Top with additional buttered buttered cracker crumbs.
  7. Bake in 375* oven for 35 minutes.
