Cranberry Walnut Apple Muffins

Ingredients:

  • 3/4 cup sugar
  • 2 tbsp oil
  • 1 egg
  • 1 1/2 cups flour
  • 1 1/2 tsp baking soda
  • 1 tsp cinnamon

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease a muffin pan.
  3. Combine apples, sugar and oil in a medium mixing bowl.
  4. Add egg and mix well.
  5. Combine dry ingredients in a separate mixing bowl.
  6. Add to apple mixture, mixing just until dry ingredients are moist.
  7. Stir in cranberries and walnuts (Batter will be dry).
  8. Spoon into the muffin cups and spread batter evenly.
  9. Bake for 25 to 30 minutes or until a toothpick inserted into the center of the muffins comes out clean.
