Coconut Pie

Ingredients:

  • 3/4 cup sugar
  • 1/3 cup flour
  • 1/4 tsp salt
  • 2 cups milk
  • 2 tbsp butter
  • 1 tsp vanilla
  • 1 9- inch baked pie crust

Directions:

  1. In a saucepan, combine sugar, flour, and salt; gradually add milk.
  2. Cook and stir 2 minutes longer.
  3. Remove from heat, stir in small amount of hot mixture into yolks; return to hot mixture, cook 2 minutes longer stirring constantly.
  4. Remove from heat.
  5. Add butter and vanilla.
  6. Stir until butter is melted.
  7. Add coconut.
  8. Pour into crust.
  9. Top with meringue and sprinkle with coconut.
  10. Brown.
