This is my husband's favorite pie. I usually make one for his birthday. Ingredients:
3/4 cup sugar |
1/3 cup flour |
1/4 teaspoon salt |
2 cups milk |
2 tablespoons butter |
3 eggs, slightly beaten |
1 teaspoon vanilla |
1 cup coconut, flaked |
1 9-inch baked pie crust |
Directions:
1. In a saucepan, combine sugar, flour, and salt; gradually add milk. 2. Cook and stir 2 minutes longer. 3. Remove from heat, stir in small amount of hot mixture into yolks; return to hot mixture, cook 2 minutes longer stirring constantly. 4. Remove from heat. 5. Add butter and vanilla. 6. Stir until butter is melted. 7. Add coconut. 8. Pour into crust. 9. Top with meringue and sprinkle with coconut. 10. Brown. |
