Coconut Blueberry Cheesecake Bars

Ingredients:

  • 1/2 cup butter
  • 3/4 cup finely crushed graham crackers
  • 1/2 cup flour
  • 1/2 cup ground pecans
  • 1/4 cup sugar
  • 1 1/2 8 oz package cream cheese, softened ( it works with fat free or regular!)
  • 2/3 cup sugar
  • 4 eggs
  • 1 tbsp milk
  • 1 tsp vanilla
  • 2 cups blueberries

Directions:

  1. Preheat oven to 350 degrees and grease a 9 X 13 in baking pan
  2. In saucepan heat butter on medium heat until color of light brown sugar, remove from heat and set aside
  3. In bowl, stir together graham crackers, flour, coconut, pecans, and 1/4 cup sugar
  4. Stir in butter until combined
  5. Evenly press mixture along bottom of baking dish
  6. Bake 8-10 minutes or until lightly browned
  7. In large mixing bowl, beat cream cheese and 2/3 cup sugar on medium until combined
  8. Add eggs, milk, and vanilla and beat until combined.
  9. Pour mixture over hot crust and then sprinkle on blueberries
  10. Bake 20 minutes or until center looks set
  11. Cool in pan on rack, then cover and refrigerate 3 hours before cutting
