Cocoa Banana Muffins

Ingredients:

  • 1 1/4 cups flour
  • 1/2 cup firmly packed brown sugar
  • 1/3 cup cocoa powder
  • 1/4 tsp baking soda
  • 2/3 cup mashed banana
  • 1/2 cup milk
  • 1 egg
  • 1 tsp vanilla

Directions:

  1. Heat oven to 400 degrees.
  2. Grease muffin pan.
  3. Combine flour, oats, sugar, cocoa powder, baking powder, and baking soda. Mix well.
  4. Add combined banana, milk, butter, egg, and vanilla. Mix just until dry ingredients are moistened.
  5. Fill muffin cups almost full. Bake 20 to 25 minutes or until wooden toothpick comes out clean.
  6. Let cool a few minutes and remove from pan. Sprinkle with powdered sugar after muffins are cooled.
