Ingredients:

  • 1/2 cup oil
  • 2 cups sugar
  • 2 eggs
  • 2 cups buttermilk
  • 1/2 cup sugar
  • 2 tbsp cinnamon
  • 1/2 tsp salt

Directions:

  1. Preheat oven to 350 degrees. Spray two loaf pans with non-stick cooking spray.
  2. Mix together oil, sugar, eggs, buttermilk, baking soda and flour in large bowl. Pour 1 cup of the batter into each prepared pan.
  3. Combine sugar, cinnamon and salt in a small bowl. Sprinkle half the sugar mixture over each pan; pour remaining batter equally between pans. Sprinkle remaining sugar mixture over batter.
  4. Using a knife, swirl through batter. Bake approximately 1 hour, or until a knife inserted in center comes out clean. Cool 10 minutes, then remove from pans and place on wire rack. Slice bread when completely cooled.
