Cider Cake With Cider Sauce

Ingredients:

  • 4 cups of sifted cake flour
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 1 lb of raisins
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 cups cider
  • 2 tbsp butter
  • 1 cup brown sugar ,packed
  • 2 tbsp flour
  • 1 cup cider

Directions:

  1. Cider Cake:
  2. Mix and sift flour,soda,salt and spices
  3. Mix about 1/2 cup with raisins
  4. Cream shortening until soft and smooth,gradually add sugar
  5. Whip until fluffy
  6. Add well beaten egg yolks,and beat mixture thoroughly
  7. Add flour mixture alternately with cider beating until smooth after each addition,stir in the floured raisins
  8. Fold in stiffly beaten egg whites
  9. Turn into greased and floured 13x9x2 pan
  10. Bake at 350 degree
  11. Bake for 1 hour
  12. Cool cake,turn out on rack,serve with Cider Sauce
  13. Cider Sauce:
  14. Melt butter in sauce pan
  15. Add very gradually combined brown sugar and flour
  16. Stirring constantly
  17. Add cider,brind to a boil and let thicken just a little
  18. Remove from heat,pour into pitcher,sprinkle with nutmeg
  19. Serve hot with your Cider Cake
  20. Can thin sauce if it becomes to thick with cold cider
