Ingredients:

  • 1 cup butter
  • 2 cups sugar
  • 3 eggs
  • 1/2 cup cocoa
  • 1/2 cup hot water
  • 1 teasp. vanilla
  • 3 cups flour
  • 1 teasp. baking soda
  • 1/2 teasp. salt
  • 1 cup finely pecans

Directions:

  1. Preheat oven to 350 F
  2. In large mixing bowl ....cream butter and sugar until fluffy
  3. Add eggs and beat until smooth
  4. In small bowl.... dissolve cocoa in hot water
  5. Add cocoa, coffee and vanilla to creamed mixture and mix well
  6. In large bowl sift together flour, baking soda and salt
  7. Add flour mixture to creamed mixture beating until smooth
  8. Fold in pecans
  9. Pour batter into 3 greased and floured 9-inch round cake pans
  10. Bake 25 - 30 minutes or until a toothpick inserted into middle of the cake comes out clean
  11. Cool in pan for 10 minutes
  12. Turn onto a wire rack to completely cool...
