Chocolate Cream From Scotlands Enchanted Castle

Ingredients:

Directions:

  1. Melt the butter and chocolate in a pan over a low heat.
  2. Cook gently for 5 minutes until the butter and chocolate are melted, mixing well all the time.
  3. When melted, take the pan off the heat but continue to whisk the mixture thoroughly for a moment or two.
  4. Spoon the chocolate mixture to a bowl.
  5. Add the egg yolks and beat in thoroughly.
  6. Place the bowl in a refrigerator.
  7. Whisk the egg whites with half the sugar until they become stiff peaks.
  8. Whisk the cream with the remaining sugar and vanilla until it becomes soft peaks.
  9. Add a couple of spoonfuls of the whites into chocolate mixture, then gently fold in remaining whites.
  10. Add in the cream, and refrigerate until chilled.
  11. It can be served in individual glasses or in one larger serving dish.
  12. Decorate with fresh raspberries and mint (or cream and grated chocolate if you prefer.Or even white chocolate ribbons shaved from a white chocolate bar.
