Chicken Breasts With Basil Sauce

Ingredients:

Directions:

  1. Place chicken in skillet with wine.
  2. Cover and cook over medium heat until done (about 15-20 minutes).
  3. Remove from heat and set aside.
  4. In a separate bowl, whisk egg yolks, cream, salt, 1/4 cup of cooking liquid, parsley and basil.
  5. Pour egg yolk mixture into a small saucepan and cook over low heat, stirring constantly until sauce thickens slightly.
  6. Remove from heat and add lemon juice.
  7. Remove breasts from pan using a slotted spoon.
  8. Place on warmed serving platter.
  9. Pour sauce over breasts just before serving.
