Ingredients:

  • 1/2 cup shortening
  • 1 cup packed light brown sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup coconut (optional)

Directions:

  1. In a mixing bowl,cream shortening and brown sugar until fluffy.
  2. Beat in the egg,maple syrup and vanilla until well mixed.
  3. Combine flour,baking powder and salt,add to the creamed mixture.
  4. Stir in coconut if desired.
  5. Drop by tablespoons 2 inches apart onto greased baking sheets.
  6. Bake at 350 for 12-15 minutes.
  7. If you want these to be chewy remove them from the oven as soon as they start to brown.
