Chewy Raisin Cookies

Ingredients:

  • 2 1/4 cups flour
  • 1 tsp salt
  • 1 cup shortening
  • 2 eggs (to lower cholesterol the 2 could be replaced with 3 egg
  • 1 tsp vanilla
  • 1 cup raisins

Directions:

  1. In a mixing bowl, mix flour, salt, and baking soda.
  2. Put shortening into medium sized bowl.
  3. Using electric beater, beat in brown and white sugars.
  4. Beat in eggs and vanilla.
  5. Sift and beat in flour mixture.
  6. Beat for 2-3 minutes or until dough is light and fluffy.
  7. Stir in raisins.
  8. Spoon onto ungreased baking pan, about two inches apart.
  9. Bake at 350°F for 12-15 minutes or until golden brown on top.
