Directions:

  1. Chop veggies into stock
  2. Simmer til tender
  3. Blend til smooth (may be frozen at this point)
  4. Stir in milk, cheddar and salt & pepper
  5. Place in bowl and top with a pinch of nutmeg
  6. Variations

  8. Potato - cheddar - bacon & chives
  9. Tomato - parmesan - basil
  10. Parsnip - havarti - cinnamon
  11. Carrot - monterey jack - curry
  12. Roasted red pepper - cream cheese - dill
