Directions:

  1. In food processor, combine vinegar, sugar, 1/2 cup blue cheese, onion, mustard, garlic and salt.
  2. Process until smooth.
  3. WIth motor running, stream in oil.
  4. Transfer to bowl.
  5. Add remaining blue cheese if desired.
  6. Chill.
