A nice change from the traditional creamy blue cheese salad dressing. Ingredients:
1 cup cider vinegar |
1/4 to 1/2 cup granulated sugar |
1/2 to 1 cup blue cheese, crumbled |
1 small sweet onion, chopped |
1 tablespoon dijon mustard |
2 cloves garlic, minced |
1/2 teaspoon salt |
1 cup vegetable oil |
Directions:
1. In food processor, combine vinegar, sugar, 1/2 cup blue cheese, onion, mustard, garlic and salt. 2. Process until smooth. 3. WIth motor running, stream in oil. 4. Transfer to bowl. 5. Add remaining blue cheese if desired. 6. Chill. |
