Ingredients:

  • 1-3/4 cup flour
  • 1/2 tsp salt
  • 3/4 cup (1-1/2 sticks) unsalted butter,softened
  • 1-1/2 cup packed lt. brown sugar
  • 2 large eggs
  • 2 tsp vanilla

Directions:

  1. Spray 13x9 baking pan with cooking spray.
  2. Preheat oven to 350.
  3. In medium bowl,whisk together flour,baking powder and salt. In large mixing bowl,combine soft butter and sugar on med. speed,beating,till creamy.
  4. Add eggs,one at a time,blending well. Stir in vanilla. Using low speed,slowly add flour mixture to butter mixture. Combine just till well blended. Stir in coconut.
  5. Spread dough in pan. Place pan on center rack in oven.
  6. Bake 25-30 mins until golden and tester,inserted in center,comes out clean. Cool completely on rack before cutting.
