Better Than An Egg Macmuffin Veggie Omelet

Ingredients:

Directions:

  1. In a bowl, lightly scramble the eggs, and season with salt and pepper to taste. Dice ham and slice tomatoes.
  2. Spray omelet pan with olive oil and preheat on medium.
  3. Saute ham, mushroom and tomato until warm. Transfer to small plate.
  4. Add eggs to omelet pan, and cook slowly. Omelets are like pancakes, patience is key.
  5. As the edges firm, peel them up and allow uncooked egg to drain under them.
  6. Spread cheese on one half of the omelet, add ham, mushroom, tomatoes and spinach.
  7. Fold omelet in half, and leave on flame long enough for cheese to melt (about a minute).
  8. Slide omelet onto plate and serve. You have a healthy breakfast in about 10 minutes, 15 if you make two.
