Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 1/4 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 2/3 cup sugar
  • 1/3 cup shortening
  • 2 eggs
  • 2 tbsp milk
  • 1/4 cup pecans or 1/4 cup walnuts, chopped

Directions:

  1. Preheat oven to 350 degrees Fahrenheit
  2. In a small bowl stir together flour,baking powder, salt and baking soda;set aside.
  3. In a large bowl cream sugar and shortening with an electric mixer until light,scraping the sides of the bowl often with a rubber spatula.
  4. Add the eggs ,one at a time, and the milk beating until smooth and fluffy after each addition.
  5. Add the flour mixture and mashed banana alternately to creamed mixture,beating until smooth after each addition.
  6. Gently fold in the chopped pecans or walnuts.
  7. Turn batter into lightly greased 8 x4 x2 loaf pan.
  8. Bake in preheated oven for 60 to 65 minutes or until wooden toothpick inserted near center comes out clean.
  9. Cool in the pan for 10 minutes.
  10. Remove from pan;cool thoroughly on a wire rack.
  11. For easier slicing, wrap the loaf in foil and store overnight.
