Ingredients:

Directions:

  1. Preheat oven to 400º.
  2. Combine oats and buttermilk in a bowl and mix well.
  3. Mix the whole wheat flour, baking powder, baking soda and cinnamon together in another bowl.
  4. Grate the zest from the orange into another bowl.
  5. Squeeze enough juice from the orange to measure 1/2 cup and add to the orange zest.
  6. Whisk the sugar, oil, and egg into the orange juice mixture until mixed.
  7. Stir in the oats mixture.
  8. Add the flour mixture and mix until just moistened.
  9. Fold in the blueberries and cranberries.
  10. Spoon the batter into muffin cups sprayed with cooking spray.
  11. Bake for 15 minutes or until the muffins test done.
