Ingredients:

Directions:

  1. Cook onions until light brown.
  2. Add garlic.
  3. Add beef and spices. Brown beef.
  4. Add tomatoes and cook till juice is gone.
  5. Add broth.
  6. Cook till beef is almost cooked.
  7. Add all other ingredients except cilantro. Cook for 15 more minutes or until all vegetables are ready.
  8. Add cilantro. Cook 5 minutes more.
  9. You can garnish with avocado, cilantro, pico de gallo, lime juice or Monterey jack cheese. You can even add a little cooked rice.
  10. Note: You can leave the spinach out but it adds to a more healthy and balanced meal.
